Bruschetta


Mangos, Mangoes everywhere.Have you noticed Whole Foods with it’s 5 for $5 champagne mango sale? Mangoes seem to be everywhere lately – so instead of slicing them into a salad – try them on bruschetta!..
Perfect for a spring or summer party, kids love this stuff, and lovely for a sunny brunch.
Sunny Mango Bruschetta
makes about 10 rounds
1/2 baguette, sliced into rounds + olive oil for brushing
bruschetta topping:
1 cup yellow bell pepper, diced (or 4 baby yellow bell peppers)
1/4 cup red pepper, diced
1 cup mango, diced – small cubes
1/3 cup fresh basil, chopped
2 cloves fresh garlic, chopped
3 Tbsp apple cider vinegar
3 Tbsp olive oil
1/2 tsp fresh black pepper
1 tsp agave  drizzle (optional)
salt to taste (optional)
Directions:
1. Add all ingredients to bowl.  Toss well. Set aside.
2. Slice your bread rounds – brush with olive oil and grill or toast lightly.
3. Assemble bruschetta:
Spoon 1 Tbsp of mixture onto each slice of bread.
Garnish with fresh basil. For extra sweet slices, drizzle with agave syrup.
Grind fresh black pepper on top.
Serve immediately.
